Ramekins, Sonoma Culinary School

The Sonoma Culinary School is a commercial building incorporating both rammed earth and shot earth exterior walls. The single story is rammed earth with hand built beam trusses supporting the wood ceiling. The second story portion is over two stories tall using the shot earth method, which is extremely difficult for walls this high. The facility has a complete commercial kitchen, demonstration kitchen, conference great room, and guest lodging on the second floor.
